- Preheat the air fryer to 180 degrees. Form the beef into 6 70g patties and season with salt and pepper. Add the burgers to the cooking basket and cook for 10 minutes.
- Remove from air fryer; place the cheese on top of the burgers and return to the air fryer to cook for 1 more minute.

- Pat broccoli dry with paper towels. Transfer to a food processor and pulse until very finely chopped. Scrape broccoli into a medium bowl and stir eggs, cheddar, panko and ranch seasoning.
- Using a tablespoon measuring spoon and lightly dampened hands, scoop out level tablespoons of broccoli mixture and press into a tater tot shape. Transfer to a plate.
- Coat air fryer basket with cooking spray. Arrange tots in a single layer in the basket, then spray with cooking spray. Cook at 200 degrees, turning halfway through and spraying with cooking spray, until crisp, 9-11 minutes.
- Arrange tots on a platter. Serve warm with ketchup.

- Cook pasta in a large saucepan of boiling, salted water for 10 minutes or until just tender. Using a slotted spoon, transfer pasta to a tray lined with paper towel to drain.
- Meanwhile, heat half the oil in a large frying pan over medium high heat. Add onion. Cook, stirring for 5 minutes or until softened. Add mince. Cook, breaking up mince with a wooden spoon, for 5 minutes or until browned. Add cumin, coriander and half the garlic powder. Cook, stirring for 1 minute or until fragrant. Add salsa and beans. Season with salt and pepper. Bring to a simmer at low for 15 minutes.
- Preheat air fryer on 200 degrees. Combine Mexican chili powder, remaining garlic powder and oil in a large bowl. Add pasta. Season well with salt and pepper. Toss gently to coat. Spoon mince mixture in pasta shells to fill. Sprinkle with cheese. Place 1/3 cup of the pasta shells, cheese side up, in the air fryer basket. Cook for 5-8 minutes or until shells are golden and crispy. Carefully transfer to a large serving plate. Repeat with remaining pasta.
- Top with combined tomato and avocado. Sprinkle with coriander. Serve with sour cream and lime cheeks.

- In a large skillet over medium heat, heat oil. Add onion and cook 2 minutes, then add ground beef and cook until no longer pink, 6 minutes, breaking up with a wooden spoon as it browns. Drain fat.
- Move beef to one side of skillet and add white rice to other side. Cook 2 minutes, then add fire-roasted tomatoes, black beans, corn, green chilis, cumin and chili powder. Season with salt and stir to combine, then pour over chicken broth.
- Bring to a simmer, cover, and cook 20 minutes.
- Top with cheddar and Monterey Jack and cover to let melt, 2 to 3 minutes.
- Garnish with cilantro and serve.

- Rub the potato all over with oil. If you like, rub salt over the skin for crispier finish.
- Put the potato in the airfryer and cook at 200 degrees for 20-30 minutes, then turn over.
- Check the middle is soft by poking a table knife into the center.
- For the cheddar and jalapeno topping, mix the cheese, tomato, and jalapeno slices, split the potato and spoon the cheese mixture on top.
- For the smashed avocado topping, mash the avocado with the lime or lemon juice, salt and pepper. Split the potato, spoon in the avocado mixture and scatter with seeds or your choice of seasoning.
