- Spray four ramekins with non-stick spray.
- On the stove, heat olive oil in a sauté pan, add spinach and cook until wilted. Drain off excess liquid.
- Divide spinach between the ramekins.
- Place the bacon in the ramekins.
- Crack an egg into each, and top with cheese.
- Sprinkle with salt and pepper.
- Set temperature to 180 degrees Celsius and set timer for 15 minutes. Adjust time to determine the runniness of the yolk.
