Pasta Tacos

  1. Cook pasta in a large saucepan of boiling, salted water for 10 minutes or until just tender. Using a slotted spoon, transfer pasta to a tray lined with paper towel to drain.
  2. Meanwhile, heat half the oil in a large frying pan over medium high heat. Add onion. Cook, stirring for 5 minutes or until softened. Add mince. Cook, breaking up mince with a wooden spoon, for 5 minutes or until browned. Add cumin, coriander and half the garlic powder. Cook, stirring for 1 minute or until fragrant. Add salsa and beans. Season with salt and pepper. Bring to a simmer at low for 15 minutes.
  3. Preheat air fryer on 200 degrees. Combine Mexican chili powder, remaining garlic powder and oil in a large bowl. Add pasta. Season well with salt and pepper. Toss gently to coat. Spoon mince mixture in pasta shells to fill. Sprinkle with cheese. Place 1/3 cup of the pasta shells, cheese side up, in the air fryer basket. Cook for 5-8 minutes or until shells are golden and crispy. Carefully transfer to a large serving plate. Repeat with remaining pasta.
  4. Top with combined tomato and avocado. Sprinkle with coriander. Serve with sour cream and lime cheeks.

Mexican Beef n Rice Skillet

  1. In a large skillet over medium heat, heat oil. Add onion and cook 2 minutes, then add ground beef and cook until no longer pink, 6 minutes, breaking up with a wooden spoon as it browns. Drain fat.
  2. Move beef to one side of skillet and add white rice to other side. Cook 2 minutes, then add fire-roasted tomatoes, black beans, corn, green chilis, cumin and chili powder. Season with salt and stir to combine, then pour over chicken broth.
  3. Bring to a simmer, cover, and cook 20 minutes.
  4. Top with cheddar and Monterey Jack and cover to let melt, 2 to 3 minutes.
  5. Garnish with cilantro and serve.
Sweet and Spicy Meatballs

Sweet and Spicy Meatballs

  1. Preheat air fryer to 195°C.
  2. In a large bowl, combine and stir the first 10 ingredients.
  3. Include beef mix gently however completely.
  4. Press into balls about 4cm in diameter.
  5. In batches, arrange meatballs in a single layer on greased tray in airfryer basket. Cook until they are lightly browned and cooked through, 12-15 minutes.
  6. Meanwhile, in a small saucepan, combine sauce ingredients.
  7. Cook and stir over medium heat until thickened.1
  8. Serve with meatballs.
