Egg nests

  1. Cut the green pepper, onion and mushrooms, mix in a pan. Add the eggs and cook till eggs are ready.
  2. Cut circles from the bread big enough to fit in cake cases. Put a bread slice in each cake case with cheese on top and then the egg mix.
  3. Sprinkle more cheese on the top and paprika for flavor. Put in the airfryer for 15-20 at 180 degrees.
  4. Remove when the cheese is melted and almost golden.

Chocolate chip Muffins

  1. Preheat the airfyer to 160 degrees.
  2. Whisk together the egg, yoghurt, milk, oil and vanilla. Stir through the caster sugar and mix until combined.
  3. Sift in the flour and cocoa powder, then add the salt and most of the chocolate chips. Stir until just combined, with no floury streaks.
  4. Arrange the cake cases and scoop batter evenly into each case. Sprinkle the reserved chocolate chips on top.
  5. When preheated, remove the basket from the airfryer and put the cake cases into it. Arrange them close together, just touching.
  6. Bake for 12-15 minutes until well-risen and the tops of the muffins spring back when pressed. Lift out of the airfryer and allow to cool on a wire rack for 15 minutes before serving.

Easy Pancakes

  1. Preheat the airfryer to 160 degrees.
  2. Combine flour, sugar, baking powder and salt in a large bowl. Make a well in the center and pour in milk, oil and egg. Mix until smooth.
  3. Take out the airfryer-pan and pour the mix in circles onto the pan. Cook until bubbles form and the edges dry(1-2 minutes) Flip over and cook until browned both sides. Repeat with the rest of the batter.
  4. Add syrup for taste.
Buttermilk chicken with Sweet Potato chips

Buttermilk chicken with Sweet Potato chips

  1. Place the buttermilk, cayenne and garlic in a bowl with the chicken breasts, cover and place in the fridge to marinate overnight.
  2. Heat the airfryer for 3 minutes. When you are ready to cook, rub as much of the marinade off the chicken as you can, then dip the breasts into a bowl of seasoned flour, then a bowl of beaten egg and finally the breadcrumbs, making sure the chicken well coated.
  3. Place the chicken in the airfryer and fry for 20 minutes at 190 degrees or until cooked through. Allow to rest while you cook the chips.
  4. Toss the chips in oil and paprika, then place in the airfryer and cook at 190 degrees for 20 minutes, shaking them twice in between. Once cooked, season the chips with salt and pepper.
Herb-crusted Rack of Lamb with Pumpkin wedges

Herb-crusted Rack of Lamb with Pumpkin wedges

  1. Heat the airfryer to 200 degrees for 3 minutes.
  2. Pat the lamb dry with a kitchen towel, then score the fat with a sharp knife to encourage it to drip out of the meat. Rub the scores with mustard.
  3. Blitz the breadcrumbs with the herbs, parmesan, lemon zest and seasoning and, using the mustard as the glue, roll the fat of the rack through this mixture to form the crust.
  4. Season the rest of the joint, then add to the airfryer with the oil and roast for 15 minutes until the crust is golden and the lamb cooked. If you like lamb well done, cook for another 5-10 minutes.
  5. For the wedges, peel and core the pumpkin and coat lightly in oil. Season and set aside. Remove the lamb and set on a plate, then add the wedges to the airfryer in a single layer, roast for around 20 minutes or until crisp, golden and cooked through. Serve with the lamb and a simple green salad.
