- Use a sharp knife to slice the chicken breasts in half horizontally. Use a meat mallet to pound out the chicken breasts about 5mm thick.
- Spread 1 tbsp chipotle sauce over a piece of chicken. Top with 1/4 of the rice. Sprinkle with 1/4 of the beans, cheese and shallot. Carefully roll from the short end of the chicken to enclose. Secure with toothpicks.
- Process the corn chips in a food processor until fine crumbs form. Transfer to a plate. Whisk the eggs in a shallow bowl. Place flour on a plate. Working in batches, press the stuffed chicken in the flour, then in the eggs and then in the corn chip crumbs, pressing firmly to coat. Place in the fridge for 20 minutes to rest.
- Spray the basket of the air fryer with oil. Place the chicken in the basket and cook at 180 degrees for 12 minutes, turning halfway, or until cooked through.
- Discard toothpicks. Serve with avocado dip, jalapenos, coriander and lime wedges.

- Carefully butterfly chicken by cutting in half widthwise all the way through. Season both sides with salt and black pepper.
- Place flour in a shallow bowl; season with salt and pepper. In another shallow bowl, beat eggs to blend. In a third shallow bowl, combine panko, parmesan, oregano, red pepper flakes and garlic powder.
- Working one at a time, coat chicken in flour, shake off any excess. Dip into eggs then finally dip into panko mixture, gently pressing to adhere and ensuring both sides of chicken are well coated.
- Arrange chicken in a single layer in the basket. Cook at 400 degrees, turning once, for 5 minutes per side. Top chicken with marinara and mozzarella. Cook until cheese is melted, about 3 minutes more.
- Garnish with parsley and serve hot.

- Using the flat side of a meat mallet, pound the chicken breasts to 1,5 cm thick. Season with 1/4 tsp kosher salt and 1/4 tsp black pepper. Lightly coat the chicken breasts with flour. Heat 1 tbsp olive oil and cook chicken until golden brown or 4-5 minutes.
- While the chicken is cooking, finely chop the shallot and garlic.
- Add 1 tbsp olive oil. Cooked the sliced cremini mushrooms, tossing occasionally for 5 minutes. Add the chopped shallot and garlic. Season with 1/4 tsp salt and 1/4 tsp black pepper. Cook for 2 minutes.
- Add the low-sodium chicken broth and Marsala wine to the shallot and garlic, along with the browned chicken and its juices and simmer until the liquid is reduced by half, 4 minutes. Sprinkle with fresh parsley. Serve with sauteed spinach.

- In a large skillet over medium heat, heat oil. Add onion and cook 2 minutes, then add ground beef and cook until no longer pink, 6 minutes, breaking up with a wooden spoon as it browns. Drain fat.
- Move beef to one side of skillet and add white rice to other side. Cook 2 minutes, then add fire-roasted tomatoes, black beans, corn, green chilis, cumin and chili powder. Season with salt and stir to combine, then pour over chicken broth.
- Bring to a simmer, cover, and cook 20 minutes.
- Top with cheddar and Monterey Jack and cover to let melt, 2 to 3 minutes.
- Garnish with cilantro and serve.

- Bring large pot of salted water to a boil. Add corn and cook for 2 minutes. Transfer to cutting board.
- Add orecchiette to a same pot and cook per package directions. Reserve 1 cup cooking water, then drain pasta.
- When corn is cool enough to handle but while pasta is still cooking, cut off kernels. Transfer 2 cups of kernels to blend along with Romano cheese, 3/4 cup pasta cooking water, and 1/4 teaspoon salt. Puree until very smooth.
- Toss pasta with corn puree, adding some reserved pasta water, 1 tablespoon at a time if pasta seems dry. Fold in reserved corn, scallions and basil. Serve sprinkled with additional cheese and basil and with hot sauce if desired.
