Chicken Marsala

Chicken Marsala

  1. Using the flat side of a meat mallet, pound the chicken breasts to 1,5 cm thick. Season with 1/4 tsp kosher salt and 1/4 tsp black pepper. Lightly coat the chicken breasts with flour. Heat 1 tbsp olive oil and cook chicken until golden brown or 4-5 minutes.
  2. While the chicken is cooking, finely chop the shallot and garlic.
  3. Add 1 tbsp olive oil. Cooked the sliced cremini mushrooms, tossing occasionally for 5 minutes. Add the chopped shallot and garlic. Season with 1/4 tsp salt and 1/4 tsp black pepper. Cook for 2 minutes.
  4. Add the low-sodium chicken broth and Marsala wine to the shallot and garlic, along with the browned chicken and its juices and simmer until the liquid is reduced by half, 4 minutes. Sprinkle with fresh parsley. Serve with sauteed spinach.
Doughnuts

Doughnuts

  1. In a mixer, add the yeast, ⅓ cup sugar and ½ cup milk. Mix all the dry ingredients in a bowl.
  2. Add one egg to the mixer with all the dry ingredients and mix until it forms a ball.
  3. Set aside and separate them into double in size. When the dough is ready, place on the counter and roll out to 3cm thickness.
  4. Make doughnuts with round cutters. Place in the air fryer basket.
  5. Mix the egg yolk and 2 tablespoons milk to make an egg wash. Brush it onto the doughnuts and place the basket in the air fryer.
  6. Cook for 16 minutes at 160 degrees. Turn the doughnuts over during cooking.
  7. Mix ½ cup of sugar and 1 tablespoon cinnamon. Dip into mixture when doughnuts are still warm.
Coconut Shrimp

Coconut Shrimp

  1. Place the shrimp on paper towels. Mix the panko and coconut together in a pan and set aside. Mix cornstarch in a pan and set aside.
  2. Place the egg white in a bowl.
  3. Dip one shrimp at a time into mixture, then into egg white, and then into the coconut mixture.
  4. Place the coated shrimp into the fry basket and cook for 10 minutes at 180 degrees.
  5. After 5 minutes, rotate the shrimp.
Chicken Tenders

Chicken Tenders

  1. Combine panko breadcrumbs with olive oil in a bowl.
  2. Mix egg and milk in a bowl. Pour flour into a pan or bowl.
  3. Dip the chicken tenders in the flour, then in the egg mixture and then in the panko crumbs. Place the tenders in the airfryer basket.
  4. Cook for 14 minutes at 200 degrees, flip over halftime during cooking.
  5. Serve with a dipping sauce.
Fish Tacos

Fish Tacos

  1. In a glass bowl, beat the egg, buttermilk and flour together. Set aside.
  2. In a glass shallow dish, combine panko, bread crumbs, salt, garlic powder and black pepper.
  3. Dip each fillet in egg mix then gently press in bread crumbs to cover.
  4. Place the fillets into airfryer basket. Spitz with oil.
  5. Set temperature to 200 degrees for 12 minutes, or until fish is cooked through.
  6. Serve in taco shells with lettuce, salsa, sour cream and cheese.
