Salmon Fishcakes

  1. Blend the onion and parsley, add the salmon, chili, salt and pepper then blend for 5-10 minutes.
  2. Transfer the mixture into a bowl, then fold in 2 tbsp breadcrumbs. Divide the mixture into 4 equal portions.
  3. Roll each portion into a ball, coat in egg, then breadcrumbs, flatten the coated balls and add into the basket.
  4. Set the temperature to 180 degrees and the timer to 15 minutes.
  5. Halfway through cooking, remove the frying basket and turn the fishcakes. Return to the air fryer and continue cooking.
  6. Cook until the fishcakes are golden brown and serve hot.
Mini Quiches

Mini Quiches

  1. Preheat the air fryer to 160 degrees. Line the air fryer basket with foil and coat with cooking spray. Arrange the phyllo cups in the basket in an even layer. Divide the chorizo, scallion and cheese among the cups.
  2. Whisk the eggs with the heavy cream and 1/2 tsp each salt and pepper; pour into the phyllo cups. Cook until the eggs are puffed, 5-7 minutes.
Air-fried Cauliflower

Air-fried Cauliflower

  1. In a small bowl, whisk ghee, garlic powder and turmeric. Place cauliflower in a large bowl. Pour ghee mixture over cauliflower, tossing to coat until all florets are tinted yellow. Season with salt and pepper.
  2. Arrange the cauliflower in the basket of the airfryer. Cook at 200 degrees for 10-12 minutes or until golden brown. Turn halfway through.
Asparagus Frittata

Asparagus Frittata

  1. Whisk eggs, milk, cheese, salt and pepper in a bowl to blend well.
  2. Spray the dish with non-stick spray.
  3. Pour the egg mixture into the dish and place the asparagus in the egg mixture.
  4. Place the dish in the basket, in the airfryer. Cook for 5-10 minutes at 350 degrees.
Fried Garlic Mushrooms

Fried Garlic Mushrooms

  1. Separate the stems from the mushrooms.
  2. To the butter, add finely chopped coriander, garlic, chopped mushroom stems, salt and pepper. Mix well.
  3. Stuff the mixture into the mushroom caps. Join two caps together and secure them with a toothpick.
  4. Dip each piece in beaten egg and roll them in breadcrumbs.
  5. Preheat the airfryer at 200 degrees. Brush the coated mushroom with oil and cook for 8-10 minutes at 180 degrees. Serve hot.
